Tasty Lentil Soup

- Preparation Time: 15 minutes - Per Serve: 620 kilojoules (145 cal). Protein 7 g. Fat 6 g.Carbohydrate 16 g. Sodium 130 mg. Potassium 488 mg.Calcium 30 mg. Iron 2.4 mg. Fibre 5 g.
- Cooking Time: 35 minutes  
- Serves: 4

Ingredients:

Instructions:

1. Heat oil in a large saucepan.Cook onion and garlic over medium heat until onion is soft.
2. Add potato, celery, tomato and chilli and cook, stirring, for 3 minutes. Stir in lentils, vegetable stock, oregano and nutmeg.
3. Bring soup to the boil, reduce heat and simmer for 30 minutes. Season to taste and serve.
