Shiitake and Rice Risotto

- Preparation Time: 10 minutes - Per Serve: 1800 kilojoules (435 calories). Protein 12 g. Fat 8 g.Carbohydrate 76 g. Sodium 650 mg. Potassium 710 mg. Calcium 80 mg. Iron 2.6 mg. Fibre 7 g.
- Cooking Time: 20 minutes  
- Serves: 4

Ingredients:

Instructions:

1. Heat oil in a heavy based saucepan. Add garlic, onion and mushrooms. Sauté until soft.

2. Stir through rice.

3. Combine stock cubes and boiling water in large jug.

4. Add hot water to rice (1⁄2 cup), simmering till liquid absorbed, then next 1⁄2 cup.

5. Add corn in the last 5 minutes, cooking until rice is tender and risotto creamy.

6. Fold through cheese and parsley. Serve immediately, top with extra parmesan cheese and parsley.
