Mexe Burgers

Ingredients:
1 cup Santarium textured
vegetable protein (TVP)
1 cup water, boiling
2 tsps oil
1 medium onion, finely chopped
1 medium carrot, grated
1 small zucchini, grated
30 g can corn kernels, drained
35 g packet taco seasoning mix
1 tablespoon chopped coriander
1 cup dry breadcrumbs
2 eggs, lightly beaten
1⁄2 cup dry breadcrumbs, extra
1 tablespoon oil, extra
Instructions:
1. Place TVP in a bowl. Add boiling water and stand for 10-15 minutes. Rinse and drain well.
2. Heat oil in a pan and sauté onion until soft. Place in a bowl, add remaining ingredients, except extra bread crumbs and oil, mix well.
3. Divide mixture into 12 equal portions, using a 1/4 cup measure, and shape into burgers.
4. Toss burgers in extra breadcrumbs.
5. Cook burgers in oil over a gentle heat until golden brown on both sides.
6. Serve in rolls with a selection of salad.
