Fresh Vegetable Frittata

Ingredients:
1 potato, cubed and cooked
1 cup cubed sweet potato, cooked
1 cup baby spinach leaves
1⁄2 cup corn kernels
1 bunch asparagus, chopped
2 shallots, chopped
3 eggs
3⁄4 cup Sanitarium So Good soy milk
2 tablespoons plain flour
1⁄2 cup reduced-fat cheese
1⁄2 teaspoon salt (optional)
1⁄4 cup reduced-fat cheese, extra
Instructions:
1. Place all the vegetables in a large bowl.
2. Combine eggs, So Good, flour, cheese and salt. Stir into vegetables.
3. Place mixture into a lightly greased 23 cm pie plate.
4. Bake in a moderate oven (180oC) for 40 minutes, then sprinkle with extra cheese and place under griller until golden.
5. Serve with a green salad.
