Fresh Vegetable Frittata

- Preparation Time: 10 minutes - Per Serve: 740 kilojoules (175 calories). Protein 11 g. Fat 7 g. Carbohydrate 16 g. Total Sugars 2 g. Sodium 320 mg. Potassium 410 mg. Calcium 180 mg. Iron 1.2 mg. Fibre 2 g.
* Analysis includes addition of salt in the recipe.
- Cooking Time: 40 minutes  
- Serves: 6

Ingredients:

Instructions:

1. Place all the vegetables in a large bowl.
2. Combine eggs, So Good, flour, cheese and salt. Stir into vegetables.
3. Place mixture into a lightly greased 23 cm pie plate.
4. Bake in a moderate oven (180oC) for 40 minutes, then sprinkle with extra cheese and place under griller until golden.
5. Serve with a green salad.
