Orange and Almond Cake

Ingredients:
125 g margarine
grated rind of 1 orange
1⁄2 cup caster sugar
2 eggs
125 g almond meal
2 tablespoons poppy seed
1⁄2 cup self-raising wholemeal flour
1⁄2 cup self-raising white flour
1⁄2 cup So Good
Orange Syrup
1 cup orange juice
1⁄2 cup sugar
Instructions:
1. Place margarine, rind and caster sugar in a bowl and beat with an electric mixer until light and creamy.
2. Add eggs (singly), beating until combined.
3. Stir in almond meal and poppy seeds.
4. Stir in half cup of sifted flour with half of So Good, then remaining sifted flour and So Good.
5. Spread mixture into a greased and lined 20 cm round tin.
6. Bake in a moderate oven (180°C) for 40 minutes.
7. Combine syrup ingredients in a saucepan. Stir over low heat until sugar is dissolved, then increase heat and simmer 5 minutes.
8. Remove from oven, insert a few holes in cake with skewer. Pour hot syrup over. Cool in tin.
This is a very moist cake and
wonderful served as a dessert cake. It also transports well for picnics.
