Orange Pancakes

- Preparation Time: 10 minutes - Per Serve: 1160 kJ (280 cals). Protein 7 g. Total
fat 2 g. Saturated fat 1 g. Carbohydrate 57 g. Total sugars 3 g. Sodium 290 mg. Potassium 385 mg. Calcium 90 mg. Iron 1 mg. Fibre 3 g.
- Cooking Time: 20 minutes  
- Serves: 12 x 20 cm pancakes

Instructions:

Pancakes
1. Sift flours and cinnamon into a bowl.
2. In a separate bowl, combine egg, milk, orange juice, honey, orange rind and margarine.
3. Make a well in the centre of the flour mixture and slowly add the orange mixture, stirring until a smooth batter has formed.
4. Place 1⁄4 cup of mixture in a moderately hot non-stick frypan and cook until bubbles form. Flip and cook for 1-2 minutes.

Apple Syrup
1. In a small saucepan, combine apple juice, extra honey, orange rind and cinnamon stick and simmer for 15 minutes, or until sauce reduces and becomes syrupy.
2. Place oranges into sauce but be careful as it may “split.”
3. Remove from heat and allow to stand for 2 minutes to allow oranges to warm. Remove cinnamon stick. Serve syrup over pancakes.
