Grapefruit Salad

Ingredients:
100 g pack of baby Asian greens (available in supermarkets)
2 grapefruit, peeled
2 tsp fresh ginger, grated
1 1⁄2 tbsp macadamia nut oil
1⁄2 cup hazelnuts, toasted, peeled* and chopped roughly.
* To peel hazelnuts, roll in a
tea towel after toasting.
Instructions:
1. Place baby greens in a large salad bowl.
2. Slice peeled grapefruit into rounds and slice again into halves. Add grapefruit, including the juice to the salad greens.
3. Add ginger, macadamia nut oil and hazelnuts. Toss to serve.
