1 cup moist prunes, pitted and chopped
1⁄2 cup dried apricots, chopped
1 cup water
1⁄2 cup roasted peanuts, chopped
11⁄2 tablespoons Sanitarium Natural Smooth Peanut Butter®
3 cups Sanitarium Skippy Corn Flakes,® crushed
1⁄2 cup desiccated coconut
1. Place prunes, apricots and water in a medium saucepan and bring to the boil. Reduce heat, and simmer 5 minutes or until fruit is soft and the water absorbed.
2. Add peanuts, peanut butter and cornflakes to the fruit mixture and combine.
3. Roll two teaspoons of mixture into balls; roll in coconut.
4. Refrigerate until ready to use.
