Cornflake Energy Bites

- Preparation Time: 10 minutes - Per Serve: 220 kJ (50 cal). Protein 2 g. Fat 2 g. Saturated fat 1 g. Carbohydrate 6 g.
Total sugars 3 g. Sodium 40 mg. Potassium 110 mg. Calcium 10 mg. Iron 0.6 mg. Fibre 1 g.
- Cooking Time: 5 minutes  
- Serves: 28 balls  

Ingredients:

Instructions:

1. Place prunes, apricots and water in a medium saucepan and bring to the boil. Reduce heat, and simmer 5 minutes or until fruit is soft and the water absorbed.
2. Add peanuts, peanut butter and cornflakes to the fruit mixture and combine.
3. Roll two teaspoons of mixture into balls; roll in coconut.
4. Refrigerate until ready to use.
