100 g rice vermicelli
1 small Lebanese cucumber, ribboned
2 sticks celery, sliced finely
1/4 cup Thai basil leaves
1/4 cup mint leaves
1/4 cup roasted peanuts, roughly chopped
dressing
80 ml lemon juice
1 small red chilli (seeds removed), finely chopped
1 clove garlic, crushed
1. Soak rice vermicelli in boiling water until soft, rinse in cold water and drain.
2. Combine the vegetables, vermicelli, herbs and dressing ingredients.
3. Garnish with peanuts. Serve immediately.
