Ingredients:
100 g baby spinach
2 cups (40 g) baby rocket leaves
1 cucumber, sliced
3 Roma tomatoes, cut into wedges
1 cup mung beans
1⁄2 avocado, sliced
1 small, red onion, thinly sliced
420 g can four-bean mix, drained and rinsed
3⁄4 cup Kalamata olives, pitted and sliced in half
Dressing
1 tbsp lemon juice
1 tbsp balsamic vinegar
1 tbsp olive oil
1⁄4 tsp salt (optional)
Instructions:
1. Place all salad ingredients into a large serving bowl.
2. In a separate bowl, whisk dressing
ingredients until combined.
3. Sprinkle salad with dressing.
Toss and serve.
