Macadamia Nut
Christmas Cake

- Preparation Time: 15 minutes - Per Serve: 1246 kJ (298 cal). Protein 6 g. Fat 12 g. Saturated Fat 2 g. Carbohydrate 45 g.
Total Sugars 33 g. Sodium 185 mg. Potassium 360 mg. Calcium 60.36 mg.
Iron 1.8 mg. Fibre 5 g.
- Cooking Time: 40 minutes  
- Serves: 12

Instructions:

  1. Lightly grease and line the cake tin. Preheat oven to 180?c.
  2. Use an electric beater to beat butter, sugar and rind until combined.
  3. Add eggs and combine.
  4. Add flours, fruit, baking soda, mixed spice, almonds and water. Stir well until all combined.
  5. Scrape mixture into cake tin.
  6. Place macadamia nuts on top, lightly pressing onto the cake mixture.
  7. Bake for 40 minutes or until a skewer inserted in the middle comes out clean.
  8. low cake to cool before removing from cake tin.
