Mini Muesli Muffins

380 kJ (90 cals). Protein 2 g. Total fat 4 g. Saturated Fat <1 g. Carbohydrate 11 g. Total sugar 5.6g. Sodium 30 mg. otassium 90 mg. Calcium 10 mg. Iron 0.4 mg. Fibre 1 g.

36 mini or 12 larger muffins
Ingredients:
1 1/2 cups natural muesli
1 cup wholemeal self-raising flour*
1/2 cup sugar
1 cup firmly packed, grated carrot
1 large green apple, grated
1/2 cup sultanas
1/2 cup pecan nuts
2 eggs, lightly beaten
1/3 cup oil
1 cup soy or dairy milk
Instructions:
Place muesli, sifted flour, sugar, carrot,
apple, sultanas and pecans into a large
bowl.
Combine eggs, oil and milk. Add liquid
ingredients to dry ingredients and mix
gently until just combined.
Spoon mixture into lightly greased 3x12-
hole mini muffin tin or 1x12-hole regular
muffin tin.
Bake in a moderate oven (190ºC) for 25
mins for mini muffins or 30 mins for regular.
Great for lunch boxes, mini muesli muffins can be frozen and just added to the lunch box.
*or 1 cup wholemeal flour plus 1 tsp baking powder
