Lima Bean Soup

- Preparation Time: 10 minutes - Per Serve: Per Serve: 600 kJ (145 cal). Protein 7 g. Total fat <1 g. Saturated fat <1 g. Carbohydrate 24 g. Total sugars 5 g. Sodium 520 mg. Potassium 840 mg. Calcium 50 mg. Iron 1.6 mg. Fibre 6 g.
- Cooking Time: 2 hours  
- Serves: 10

Ingredients:

Instructions:

  1. Place lima beans in a bowl and cover with water. Stand overnight.
  2. Next day, drain and rinse well.
  3. Place beans, vegetables, stock cubes and enough water to cover vegetables in a large saucepan. Bring to boil, then reduce heat and simmer for 2 hours.
  4. Serve topped with freshly grated parmesan and fresh herbs.
