Sundried Tomato Pesto Pasta

Ingredients:
30 g pine nuts, toasted
1/4 cup grated
parmesan cheese
1 bunch basil, leaves removed
2 cloves garlic
1/2 teaspoon salt (optional)
3 tablespoons light olive oil
2 tablespoons water
1/2 cup sundried tomatoes,
drained and chopped
500 g packet dried
spaghetti
Instructions:
1. Place pine nuts, cheese, basil, garlic
and salt in a food processor.
2. Process ingredients while slowly
adding oil and water, until a paste
consistency is reached.
3. Fold through sundried tomatoes.
4.
Cook pasta according to instructions on packet. Drain.
5. Fold pesto sauce through pasta and serve with extra parmesan cheese.
