Spiced Potato and Lentil Curry

- Preparation Time: 10 minutes - Per Serve: 900kJ (215 Cal); Protein 10 g; Total Fat 4 g; Saturated Fat <1 g; Carbohydrate 30 g; Total Sugars 2 g; Sodium 630 mg; Potassium 905 mg; Calcium 25 mg; Iron 2.9 mg; Fibre 7 g.
- Cooking Time: 30 minutes

Instructions:

  1. Place a medium-sized, heavy-based saucepan over medium heat and add oil. When oil is hot, add onion, chilli and garlic, and cook for 3-5 minutes.
  2. Add ground spices and potatoes, and fry for 5 minutes.
  3. Add lentils and stock, then simmer for 20 minutes or until potatoes are cooked and stock has evaporated. Serve with a green salad.
