Individual Vegetable Burgers

- Preparation Time: 15 minutes - Per Serve: 920 kJ (220 cal); protein 8 g; total fat 9 g; saturated fat 1 g; carbohydrate 25 g; total sugars 6 g; sodium 360 mg; potassium 465 mg; calcium 35 mg; iron 2.6 mg; fibre 5 g.
- Cooking Time: 10-12 minutes  
- Serves: 6

Ingredients:

Instructions:

1. Combine carrot, zucchini, lentils, corn kernels, bread crumbs, mayonnaise, egg and chives in a bowl and shape 1/3 cup of mixture into patties. Refrigerate for 30 minutes.

2. Preheat a non-stick frying pan over medium heat, add oil and cook burgers in batches for five minutes on each side or until cooked through.

3. Place in oven for further five minutes.

4. Serve on rolls with tomato, lettuce, cheese and condiments of your choice.
