Real Banana ice-cream

  • Cooking time: 0 minutes
  • Serves: 4

Ingredients:

  • 4 very ripe bananas
  • ¼ tsp cinnamon, nutmeg or wattleseed
  • ¼ tsp vanilla essence

Method:

  1. Slice the bananas into small chunks and place on a tray lined with freezer film and freeze overnight or until solid.
  2. Remove from freezer and defrost for about 5-10 minutes. (If you crush the frozen banana as soon as you take it out of the freezer, it will resemble breadcrumbs until it thaws slightly.)
  3. Transfer into a food processor, together with cinnamon and vanilla essence and puree until you have a smooth, ice-cream-like texture.
  4. Serve immediately in bowls or re-freeze for later use.

TIP: For extra flavour, drizzle each banana ice-cream portion with passionfruit or maple syrup just before serving.
